RECIPE: Banana Bread with Crunchy Brown Sugar Topping

Prep time: 15 minutes (max)

Baking time: 50-60 minutes

** Jock’s Tips: Use 1/3 less sugar and add some agave syrup instead. Also for gluten-free alternatives, use a gluten-free flour substitute. :) If you’d like to have chocolate chips in the bread, use 1/3 cup sugar.

Ingredients:

1/2 cup margarine
1 cup white sugar
1 egg
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
2 large or 3 small bananas
3 tbsp. milk IF NEEDED
2 tbsp. brown sugar crumble for top of bread.

Directions:

  1. Grease a loaf baking pan. Set aside.
  2. Mix margarine, sugar, egg and bananas in onebowl.
  3. Mix flour, baking powder and baking soda inanother bowl. Add cinnamon for taste (optional)
  4. Add dry to wet and stir until mixed thoroughly.
  5. Put into baking pan and lightly sprinkle top of theloaf with brown sugar.
  6. Bake for 1 hour at 350 degrees. Check after 45minutes. Stick a toothpick in and if it comes out clean, then the loaf is done. Otherwise, put it in for additional 5 minutes at a time until cooked.
