Ep. 17 How to Make Meringues

Did you know that “meringue” is not just the white fluffy sweetness on the top of your mama’s pies? Oh no it’s not!

In this 17th episode of “A Jock’s Guide” Cooking Series, you’ll learn that meringues are actually their own sweet little entities! They are super easy to make and this sweet little ditty is going to show you how. BUT ….it wouldn’t be a ‘true’ Jock’s Guide episode without a few fumbles along the way so be sure to watch and learn before you crack open your eggs.

Ingredients

  • 4 egg whites (room temperature)
  • 230g superfine sugar (Castor sugar)
  • 1 teaspoon pure vanilla or almond extract
  • few dropsfood colouring of your choice

Note

For the love of meringues and everything else in the land of baking… USE PARCHMENT PAPER!

Directions

Step 1
Preheat oven to 235 degrees Fahrenheit
Step 2
Line a baking sheet with PARCHMENT PAPER * Do this! Meringues will not work if you skip this step! *
Step 3
Beat egg whites in a large bowl with electric beaters until frothy and stiff.
Step 4
Slowly add the sugar, one tablespoon at a time and beat the mixture until thick and glossy.
Step 5
Add vanilla or almond flavouring and food colouring. Scrape down the bowl and continue beating until stiff peaks form.
Step 6
Transfer the mixture to a piping bag or spoon out the mixture into small piles or "shells" on your prepared baking sheet. If you don't have a piping bag, watch the video on www.ajocksguide.com to show how to use a Ziploc bag instead! Keep a few inches between each of the shells.

* If piping, be sure not to compress the mixture. Coil with a light hand into a circle.
* If spooning, spoon approximately 1/2 cup of the mixture into a blob.
Step 7
Place in oven and bake for 60-75 minutes, or until meringues peel nicely off and sound hollow when tapped.
Step 8
Turn oven off and leave meringues in the oven overnight to dry out.

Healthy Banana-Apple Bread

This is the healthy, low-fat version of Ep. 3 Banana Bread

I love my grandmother. I remember her funny chuckle and the way she’d call me “Katherrrrrrn” instead of “Katie”. The twinkle in her eye could light up a room and she was the one responsible for my gambling smarts and crocheting ability. She also made the most amazing banana bread. I remember the smell of it baking in her oven.  You may have already tried her recipe for Banana Bread with Crunchy Brown Sugar Topping that was featured in Episode 3. 

Well, Grandma, I think I’ve made you proud today:  I have found a way to adapt your recipe to make it a little more acceptable for us health-conscious folk.  I added apples, removed some of the butter and all of the refined sugar and bulked it up with some organic oats.  It’s amazing.
